A conversation with Gem Boner, founder of Restaries

Restaries is a collection of contemporary retreats created by Gem Boner and Thom Scherdel. Set on the grounds of a 16th-century Suffolk farm, which has previously seen cider production and New World Music distribution, it has now been transformed into an array of unique luxury holiday stays.

Can you tell us who you are and a little bit about Retaries? 

Gem Boner, founder of Restaries, a boutique accommodation and events space in the heart of Suffolk.

When did you open Restaries and what was the inspiration behind it?

We opened Restaries this year with the vision of creating something with heart - something that was small enough to offer a truly unique and personal guest experience, but big enough to still feel exciting and fresh. Our goal was to offer luxury stays that didn’t feel stuffy, a place where you could kick back with friends, yet also feel special enough for life’s important celebrations.

What sets Restaries apart from other retreats? What are the important things customers should know before deciding to book a stay at Restaries?

Our commitment to creating not just beautiful spaces, but an experience that is truly personal. We take pride in our attention to detail and the bespoke nature of our concierge service. From the moment guests arrive, we aim to provide a tailored experience that caters to their unique needs and preferences, ensuring that each stay feels one-of-a-kind. And, of course, our guests absolutely love the animals! It’s something that adds a special, unexpected charm to the experience.

How did you come across Holmes Bespoke and what made you get in touch? 

We’ve always had a passion for bespoke items that allow us to add our personal touches, which is why we choose Holmes Bespoke. We love how personalised their approach is, it can truly transform a space, and we’re also drawn to the use of natural fabrics. This is exactly what we went for in our Gate House—creating a space that feels both unique and connected to nature, with warmth and authenticity.

We’re thrilled to have one of our rugs at Restaries! We believe rugs play a key role in creating warmth, comfort and textural interest within a space. How do you ensure that your retreats provide this cosy, inviting atmosphere for guests? 

We believe rugs are key to creating warmth and comfort. At Restaries, we choose high-quality, natural fabrics that add texture and complement the design of each room. Every space is curated with cosy touches and soft textures to make our guests feel at home, ensuring a welcoming and relaxing atmosphere.

What is your approach to creating the right experience for your guests? 

Our approach is all about personalisation, gathering subtle details before their stay to ensure we can surprise them with thoughtful moments. Whether it’s a cocktail in the woods, the papers delivered to their door, or taking the kids out in our land trolley to see the animals while the parents enjoy a coffee break, we aim to create memorable experiences.

Did adding our rug inspire any new design ideas or approaches for other rooms at Restaries?

This was our first step into the bespoke rug world, so we look forward to being more adventurous  with the next design. We also love the idea of using rugs on the wall as tapestries, so that might be our next idea.

Do you have a favourite Holmes Bespoke design?

The Natural Edit rugs are our favs at the moment. 

Sustainability is a major focus for us at Holmes Bespoke, and it sounds similar for Restaries. Can you tell us more about any sustainable practices you’re especially proud of?

We strive to make sustainable choices whenever the opportunity arises, whether it's in the way we wash clothes in the kitchen, the cleaning products we use, or the recycled water bottle fabrics chosen for our sofas

How has your overall experience with Holmes Bespoke been?

Brilliant, Laylah the Founder has been there every step of the way, there are so many options, so it was great to be guided through the choices.

Is there anything else you would like our readers to know?

There’s a lot more coming to Restaries in 2025 - two additional accommodation spaces, a shop, and an exciting new events space called The Tiles. We’re collaborating with incredible creatives to bring it to life, with everything from an artist-in-residence exhibition to pop-up restaurants. So, watch this space!
